As is usual at this time of year, no matter how hard you try, at the allotments courgettes are plenty. In fact I am sure there is a game of courgette knock and run going on as when you return to your plot the next day, what was harvested previously has miraculously been replaced overnight!
So we found ourselves with a couple of small (yes really) courgettes, some spring onions (from my parents along with a bag of gnocchi) but now we needed some inspiration. Fortunately BBC Good Food came to the rescue with their recipe for Gnocchi with courgette, mascarpone & spring onions.
Really simply and easy to do (I used a few dried chilli flakes rather than a fresh chilli) and the post meal review was “Do again!” – a result.
